  • 4 sheets nori, cut into small squares to line cups

Instructions

  1. Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed and rice is tender. Remove from heat, and gently fold in rice vinegar, sugar, and salt. Allow rice to cool to room temperature.
  2. Bake the Salmon: Preheat your oven to 375°F (190°C). Marinate the salmon fillet in soy sauce for 10 minutes. Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes or until the salmon flakes easily with a fork. Allow to cool slightly, then flake into bite-sized pieces.
  3. Assemble Sushi Cups: Line each cup of a muffin tin with a nori square. Press a spoonful of the seasoned sushi rice firmly into the bottom and sides of each cup to form a base. Add a few pieces of baked salmon on top of the rice, then garnish with a slice of avocado.
  4. Serve: Carefully remove the sushi cups from the muffin tin. Serve immediately with additional soy sauce on the side for dipping.
