Ingredients

Scale

Chicken and Seasoning

  • 2 boneless and skinless chicken breasts, halved horizontally to make 4 cutlets
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Sandwich Components

  • 8 slices Texas toast
  • 8 slices fully cooked bacon
  • 4 slices Swiss cheese
  • 1 large tomato, sliced
  • Romaine or iceberg lettuce leaves

Instructions

  1. Prepare the Blackening Seasoning: In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, salt, and black pepper to create the blackening spice mix.
  2. Season the Chicken: Pat the chicken cutlets dry with paper towels. Coat each side evenly with the blackening seasoning mix to ensure a flavorful crust.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken cutlets and sear for about 4-5 minutes on each side or until the chicken is cooked through and has a dark, flavorful crust. Remove from heat and set aside.
  4. Cook the Bacon: In a separate pan or in the oven, cook the fully cooked bacon slices until they are crispy. Drain on paper towels.
  5. Toast the Bread: Toast the Texas toast slices until golden brown and slightly crispy.
  6. Assemble the Sandwiches: On one slice of toasted Texas toast, layer romaine or iceberg lettuce leaves, a cooked blackened chicken cutlet, 2 slices of bacon, one slice of Swiss cheese, and tomato slices. Top with another slice of toasted Texas toast. Repeat for remaining sandwiches.
  7. Serve: Slice the sandwiches in half if desired and serve immediately while the chicken is warm and juicy.

Notes

  • Adjust cayenne pepper according to your spice preference to make the chicken more or less spicy.
  • You can substitute Texas toast with your favorite thick-cut sandwich bread.
  • For a lighter option, use turkey bacon instead of regular bacon.
  • To keep the sandwich warm before serving, wrap in foil and place in a low oven for a few minutes.
  • Leftover blackened chicken works great for salads and wraps.
