A luscious Blueberry Lemon French Toast casserole that combines creamy lemon-infused custard with fresh blueberries and soft French bread, perfect for a delightful breakfast or brunch treat.

Ingredients

Scale

Custard Mixture

  • 2 cups milk
  • 8 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp vanilla extract
  • 1 lemon, zest and 2 tbsp juice

French Toast Base

  • 2 loaves French bread, cubed

Blueberry Cream Cheese Topping

  • 1 (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 2 cups blueberries

Instructions

  1. Prepare the Blueberry Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and 2 tablespoons of milk, continuing to beat until well combined and creamy. Gently fold in 2 cups of fresh blueberries and set aside.
  2. Mix the Custard: In a large bowl, whisk together 2 cups of milk, 8 large eggs, cinnamon, nutmeg, vanilla extract, lemon zest, and lemon juice until thoroughly combined.
  3. Assemble the French Toast Casserole: Place the cubed French bread into a greased 9×13 inch baking dish. Pour the custard mixture evenly over the bread, pressing down gently to ensure the bread absorbs the liquid.
  4. Add the Blueberry Cream Cheese Topping: Dollop spoonfuls of the blueberry cream cheese mixture over the soaked bread, then gently swirl it in with a knife for a marbled effect throughout the casserole.
  5. Soak and Refrigerate: Cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the bread to soak up the custard fully.
  6. Bake: Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and bake uncovered for 45-55 minutes or until the top is golden brown and the custard is set in the center.
  7. Serve: Let the casserole cool for 10 minutes before serving. Garnish with additional fresh blueberries or a dusting of powdered sugar if desired. Enjoy warm.

Notes

  • Use day-old French bread for best texture as it soaks up the custard better without becoming too soggy.
  • For extra flavor, add a tablespoon of orange zest along with the lemon zest.
  • Make the casserole the night before to save time in the morning and enhance flavor absorption.
  • This dish can be prepared gluten-free by substituting the French bread with gluten-free bread cubes.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
