Chicken
- 3–4 boneless, skinless chicken breasts, thinly sliced
Noodles
- 8 ounces Lo Mein noodles (fresh or dried)
Vegetables
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
Sauce & Seasoning
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
- Prepare the Noodles: Bring a large pot of water to a boil and cook the lo mein noodles according to package instructions until just tender. Drain and rinse under cold water to stop cooking. Set aside.
- Cook the Chicken: Heat half of the sesame oil in a large skillet or wok over medium-high heat. Add the sliced chicken breasts and stir-fry until cooked through and no longer pink, about 5-7 minutes. Remove chicken from the pan and set aside.
- Sauté the Vegetables: In the same skillet, add the remaining sesame oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced red and yellow bell peppers and carrots and stir-fry for 3-4 minutes until vegetables are tender-crisp.
