This classic Chicken with Buttered Noodles recipe is a comforting, easy-to-make dish featuring tender, herb-seasoned chicken breasts served atop rich buttered egg noodles. Perfect for a family dinner, it’s flavorful, satisfying, and comes together quickly with simple ingredients.

Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme

For the Buttered Noodles

  • 8 ounces egg noodles
  • 3 tablespoons unsalted butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and dried thyme to evenly coat the chicken.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side until fully cooked through and golden brown on the outside. Internal temperature should reach 165°F (74°C). Remove from heat and set aside to rest.
  3. Cook the Egg Noodles: Bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions, usually about 7-8 minutes until al dente. Drain well.
  4. Make the Buttered Noodles: In the same pot, melt the butter over low heat. Return the drained noodles to the pot and toss gently to coat with butter. Season with salt and pepper to taste.
  5. Serve: Plate the buttered noodles and place the cooked chicken breasts on top. Garnish with fresh parsley if desired, and serve immediately while warm.

Notes

  • You can substitute thyme with other dried herbs like rosemary or oregano, depending on your preference.
  • For extra flavor, add a squeeze of lemon juice over the chicken before serving.
  • If you prefer, swap egg noodles with other pasta types such as fettuccine or linguine.
  • Use low-sodium chicken broth in the noodles instead of water for a richer taste.
  • Leftover chicken and noodles can be stored in an airtight container in the refrigerator for up to 3 days.
