Pasta
- 1 lb. elbow macaroni pasta
Cheese
- 8 oz. sharp cheddar cheese, grated
- 4 oz. American deli cheese, cut into 1” cubes
Other Ingredients
- 4 tablespoons butter, cut into 1” cubes
- 3 cups half and half
- 1 tablespoon dijon mustard
- 1 teaspoon onion powder
- 1 teaspoon salt
- Prepare pasta: Cook the elbow macaroni in a large pot of salted boiling water until al dente according to package instructions. Drain and set aside.
- Combine ingredients in Crock Pot: In the slow cooker, add the cooked pasta, grated cheddar cheese, cubed American cheese, butter cubes, half and half, dijon mustard, onion powder, and salt. Stir gently to combine all ingredients evenly.
- Cook the mac and cheese: Cover the Crock Pot and cook on low heat for 2 to 3 hours, stirring every 30-45 minutes to ensure even melting and prevent sticking. The cheese sauce should become creamy and thickened.
- Final stir and serve: Once the sauce is smooth and the macaroni is fully coated, give it a final stir. Taste and adjust seasoning if needed. Serve warm immediately for the best creamy texture.
Notes
- Stirring regularly is important to prevent cheese from clumping or sticking to the pot.
- You can substitute half and half with whole milk, but the sauce may be less creamy.
- Try adding cooked bacon or sautéed vegetables for extra flavor and texture.
- If using pre-shredded cheese, be aware it may contain anti-caking agents affecting melt quality.
- To make ahead, prepare and refrigerate; reheat gently with extra half and half to restore creaminess.
