Ingredients

Scale

Ingredients

  • 46 ounces thinly sliced beef prosciutto
  • Fresh mozzarella balls (bocconcini or ciliegine), drained
  • 2025 medium-sized fresh basil leaves
  • 1015 cherry or grape tomatoes, halved (optional)
  • Good quality olive oil, for drizzling
  • Freshly ground black pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

  1. Drain Mozzarella: Drain your fresh mozzarella balls thoroughly by spreading them on a plate lined with paper towels and patting them dry gently to remove excess moisture.
  2. Prepare Basil and Tomatoes: Wash fresh basil leaves and pat dry completely. If using cherry or grape tomatoes, wash and halve them lengthwise.
  3. Assemble Bites: Lay a slice of beef prosciutto flat on a clean surface and place one drained mozzarella ball or half a bocconcini near one end of the slice.
  4. Add Basil: Place a fresh basil leaf directly on top of the mozzarella ball.
  5. Add Tomato (Optional): If using, position one halved cherry or grape tomato cut-side down against the mozzarella and basil.
  6. Roll Prosciutto: Carefully but firmly roll the beef prosciutto around the mozzarella, basil, and tomato to enclose the filling.
  7. Secure Bites: For extra hold, thread a small toothpick or skewer through the center of each bite to keep them intact.
  8. Arrange: Place the assembled bites neatly on a serving platter as you complete them.
  9. Finishing Touches: Just before serving, drizzle good quality olive oil over the bites, then generously drizzle with balsamic glaze and finish with a light dusting of freshly ground black pepper.

Notes

  • Ensure mozzarella balls are well drained to prevent sogginess in the bites.
  • You can substitute beef prosciutto with regular prosciutto if preferred.
  • To make serving easier at parties, prepare the bites ahead and refrigerate, adding olive oil and balsamic glaze just before serving.
  • These bites pair well with a crisp white wine or light red.
  • For added flavor, consider adding a small amount of freshly cracked black pepper onto the mozzarella before rolling up.
