Chicken

- 2 tbsp olive oil, divided

- 1 tbsp cornstarch

- 1/4 cup soy sauce
- 2 tbsp honey
- Prepare the sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until well combined. Set aside.
- Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté for 3-5 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside on a plate.
