  • 8.5 oz Jiffy corn muffin mix
  • 8.25 oz creamed corn
  • 2 tbsp milk
  • ¼ cup sour cream

Instructions

  1. Prepare the Ground Beef Mixture: In a large skillet over medium heat, cook the lean ground beef until browned, breaking it apart with a spatula. Drain any excess fat, then add the drained corn, kidney beans, salsa, taco seasoning, water, salt, black pepper, and garlic powder. Stir well to combine and simmer for 5-7 minutes until heated through and slightly thickened.
  2. Preheat Oven and Mix Topping: Preheat your oven to 375°F (190°C). In a mixing bowl, combine the Jiffy corn muffin mix, creamed corn, milk, and sour cream until smooth and well blended.
