Ingredients

Scale

Protein and Vegetables

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • 1 small head cabbage (about 8 cups shredded)

Liquids and Seasonings

  • ¼ cup chicken broth
  • 3 tablespoons soy sauce or Tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil

For Serving

  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha mayo (optional)

Instructions

  1. Cook the turkey: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the ground turkey and cook, stirring occasionally, until it’s almost cooked through and no longer pink, about 5-6 minutes.
  2. Sauté onion and aromatics: Push the turkey to one side of the pan and add the remaining tablespoon of olive oil. Add the finely diced sweet onion and cook for 3-4 minutes, stirring occasionally until softened. Then add shredded carrots, minced garlic, and ginger, cooking for another 2 minutes while stirring frequently.
  3. Add liquids and cabbage: Pour in the chicken broth and scrape any browned bits off the bottom of the pan for extra flavor. Next, add the shredded cabbage, soy sauce or tamari, rice vinegar, salt, and black pepper. Stir everything together well.
  4. Simmer until cabbage is tender: Cover the skillet and reduce the heat to medium-low. Let the mixture cook for 12-15 minutes, stirring occasionally, until the cabbage has softened to your liking.
  5. Finish with toasted sesame oil: Remove the pan from heat and stir in the toasted sesame oil for added aroma and flavor.
  6. Serve: Spoon the egg roll mixture over cooked white rice, if desired. Top with sliced green onions, toasted sesame seeds, and a drizzle of sriracha mayo for a spicy kick, if you like.

Notes

  • Use either soy sauce or tamari to keep the recipe gluten-free if using tamari.
  • Adjust the cooking time for cabbage based on your preferred texture—less time for crunchier, more for softer cabbage.
  • Sriracha mayo is optional but adds a nice creamy heat to the dish.
  • Ground pork or beef can be substituted for turkey if preferred.
  • Serve over cauliflower rice for a lower-carb option.
