Ingredients

Scale

For the Chicken:

  • 1 pound chicken breasts, pounded to an even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon black pepper

For the Avocado Salsa:

  • 2 medium avocados, ripe but firm, chopped
  • 1 cup cherry tomatoes, quartered (or 2 Roma tomatoes, seeded and chopped)
  • Fresh corn from 1 ear of sweet corn (kernels removed)
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced, seeds separated (adjust for heat preference)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Chicken Marinade: In a bowl, combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and black pepper. Mix well to create a flavorful marinade.
  2. Marinate the Chicken: Place the pounded chicken breasts in a shallow dish or ziplock bag and pour the marinade over them. Ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours, to allow the flavors to penetrate the meat.
  3. Prepare the Avocado Salsa: While the chicken marinates, combine chopped avocados, cherry tomatoes, corn kernels, red onion, red bell pepper, jalapeño, cilantro, minced garlic, lime juice, ground cumin, and salt in a bowl. Stir gently to combine without mashing the avocado. Set aside.
  4. Cook the Chicken: Heat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with a nice char.
  5. Serve: Let the chicken rest for a few minutes after cooking. Slice if desired and serve topped or alongside the fresh avocado salsa. Enjoy with warm tortillas or a side of rice for a complete meal.

Notes

  • For extra smoky flavor, use a grill or grill pan to cook the chicken.
  • Adjust jalapeño quantity to control the heat in the avocado salsa.
  • Use fresh lime juice for the best citrus flavor.
  • The salsa can be prepared ahead and stored in the refrigerator, but add avocado last to prevent browning.
  • This dish pairs well with warm corn tortillas or as a filling for tacos or burritos.
