Ingredients

Scale

Egg Whites Mixture

  • 3 large eggs, separated
  • ¼ tsp cream of tartar

Egg Yolk Mixture

  • 3 large egg yolks
  • ½ cup full-fat cottage cheese
  • 1 tbsp almond flour (optional)
  • 1 tbsp coconut flour (optional)
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil or melted butter

Topping

  • Sesame seeds or fresh herbs for topping

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Separate Eggs: Carefully separate the egg whites from the yolks, placing them into two separate clean bowls.
  3. Whip Egg Whites: Using a mixer, whip the egg whites with the cream of tartar until stiff peaks form, indicating the whites hold shape firmly.
  4. Mix Egg Yolk Batter: In another bowl, combine the egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil or melted butter. Mix until the batter is smooth and creamy.
  5. Fold in Egg Whites: Gently fold the whipped egg whites into the yolk mixture using a spatula. Be careful to retain as much air as possible for the fluffiness.
  6. Form Rounds: Drop spoonfuls of the mixture onto the prepared baking sheet and shape them into round discs, spacing them slightly apart.
  7. Bake: Bake in the preheated oven for 25 to 30 minutes or until the cloud breads turn golden brown on top.
  8. Cool: Remove from the oven and transfer to a wire rack. Allow the breads to cool completely before serving to maintain their texture.

Notes

  • For best results, ensure no yolk gets into the egg whites to help them whip properly.
  • Almond and coconut flours are optional but add texture and structure; you can omit them for a lighter result.
  • Use fresh eggs for optimal volume and texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently before serving to regain softness.
