This Garlic Butter Shrimp & Corn Skillet recipe is a quick and flavorful dish combining succulent shrimp sautéed in garlic butter with sweet corn kernels. Perfect for a weeknight meal, it offers a delicious blend of tender seafood and lightly caramelized corn, finished with fresh parsley and an optional lemon juice squeeze for a bright touch.

Ingredients

Scale

Shrimp and Corn

  • 1 lb large shrimp (peeled and deveined)
  • 2 cups corn kernels (fresh or frozen)

Seasonings and Garnish

  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • 1 tablespoon fresh parsley (chopped, for garnish)
  • Juice of 1 lemon (optional)

Instructions

  1. Prepare the Ingredients: Clean the shrimp if needed by peeling and deveining. Pat them dry with paper towels. For corn, cut fresh kernels off the cob or thaw frozen corn.
  2. Cook the Shrimp: Melt butter in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Season shrimp with paprika, salt, and pepper then cook shrimp in skillet for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  3. Cook the Corn: In the same skillet, add corn kernels and sauté for 3-4 minutes until heated through and slightly caramelized. Return shrimp to the skillet and squeeze fresh lemon juice over the mixture if desired. Stir to combine.
  4. Serve: Remove skillet from heat, garnish shrimp and corn with chopped parsley. Serve warm alone or over rice or pasta for a hearty meal.

Notes

  • If using frozen corn, be sure to thaw completely for even cooking.
  • Adjust paprika amount based on spice preference.
  • Lemon juice adds brightness but can be omitted if preferred.
  • This dish pairs well with steamed rice, pasta, or crusty bread.
  • Use fresh parsley for best flavor; dried parsley can be substituted but add less.
