Delicious and crispy chicken bites seasoned with a blend of herbs and spices, pan-fried to perfection in olive oil and butter, then garnished with garlic and fresh parsley for a flavorful bite-sized appetizer or snack.

Ingredients

Scale

Chicken

  • 20 oz (1 ¼ lbs) boneless, skinless chicken breasts

Seasoning

  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground pepper to taste

Cooking & Garnish

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  1. Prepare the Chicken: Cut the boneless, skinless chicken breasts into bite-sized pieces, ensuring uniform sizes for even cooking.
  2. Mix the Seasoning: In a shallow bowl, combine the all-purpose flour, dried oregano, dried basil, sweet paprika, salt, and freshly ground pepper. Mix well to evenly distribute the seasonings.
  3. Coat the Chicken: Toss the chicken bites in the seasoned flour mixture until each piece is lightly and evenly coated.
  4. Heat the Pan: Place a large skillet over medium heat and add the olive oil along with 2 tablespoons of the unsalted butter. Allow the butter to melt and the pan to heat up, but avoid burning the butter.
  5. Cook the Chicken Bites: Add the coated chicken pieces to the hot skillet in a single layer. Cook for about 3-4 minutes on each side until golden brown and cooked through. Avoid overcrowding the pan to ensure even frying. Remove the cooked chicken bites and set aside on a plate.
  6. Sauté Garlic: Reduce heat to low, add the remaining 1 tablespoon of butter to the skillet, and sauté the minced garlic until fragrant and lightly golden, about 1 minute, stirring continuously to prevent burning.
  7. Combine and Garnish: Return the chicken bites to the skillet, toss to coat them in the garlic butter sauce, and cook for an additional minute to blend flavors. Remove from heat and sprinkle freshly chopped parsley over the top before serving.

Notes

  • For extra crispiness, let the coated chicken rest for 10 minutes before cooking.
  • You can substitute dried herbs with fresh herbs; use 1 tablespoon of fresh oregano and basil each.
  • Serve with your favorite dipping sauce or a squeeze of fresh lemon for added zest.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
