Instructions

  1. Preheat and Marinate Feta: Preheat your oven to 375°F. In a large bowl, whisk together the extra-virgin olive oil, juice of 2 lemons, minced garlic, dried oregano, and red pepper flakes. Season the mixture with freshly ground black pepper. Add the cubed feta cheese to the marinade and toss gently to coat the feta evenly. Cover the bowl and refrigerate for approximately 10 minutes while preparing the other ingredients.
  2. Roast the Salmon: Arrange the thinly sliced lemon and sliced red onion at the bottom of a large baking dish to create a flavorful bed for the salmon. Place the salmon fillets skin-side down on top of the lemon and onion slices. Season the fillets generously with kosher salt and freshly ground black pepper. Bake in the preheated oven until the salmon is opaque and flakes easily with a fork, about 18 to 20 minutes.

Prepare the Topping: While the salmon roasts, add the quartered tomatoes, sliced kalamata olives, chopped Persian cucumbers, chopped red onion, and freshly chopped dill into the bowl with the marinated feta.
