Instructions

  1. Prepare the Chicken: Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with a paper towel. In a bowl, mix garlic powder, smoked paprika, salt, and pepper. Rub this seasoning all over the chicken thighs.

  4. Bake the Chicken: Brush the honey BBQ sauce mixture over the chicken thighs generously. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is caramelized.
  5. Boil the Potatoes: While the chicken bakes, wash and halve the Yukon Gold potatoes if they are larger than bite-sized. Place them in a pot of salted water and boil for 15-20 minutes, or until tender when pierced with a fork. Drain and set aside.
