Instructions

  1. Prepare the grapefruit: Heat oven to 400 degrees Fahrenheit. Finely grate about half of the grapefruit zest into a medium bowl. Cut the grapefruit crosswise in half. Run a paring knife around the perimeter between the white pith and the flesh, loosening each section. Scoop the grapefruit segments into the bowl, leaving any juice behind. Squeeze the juice from the emptied grapefruit halves into a small saucepan, removing any seeds or pith with a spoon.
  2. Make the glaze: Bring the grapefruit juice to a boil over high heat, then continue boiling until it reduces to about one tablespoon and becomes syrupy, approximately 3 minutes. Remove from heat and stir in the honey and a little more than half of the grated garlic.
  3. Prepare the salmon: Line a rimmed sheet pan with parchment paper. Pat the salmon fillets dry, rub them with extra-virgin olive oil, and season generously with salt and black pepper. Place the fillets skin-side down on the prepared pan and spoon the honey-garlic glaze evenly over the top of each piece.
  4. Roast the salmon: Roast in the preheated oven until just cooked through, about 10 to 15 minutes. The salmon is done when the flesh flakes easily and an instant-read thermometer inserted into the thickest part registers 120 degrees Fahrenheit.
