Sausage Mixture

  • 2 cups Hungry Jack Pancake Mix (only requires water)
  • 1 cup water (filtered or tap)
  • 1/4 cup pure maple syrup

Instructions

  1. Prepare the Sausage Mixture: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat and mix in the diced jalapeños and shredded cheddar cheese while the sausage is still warm to allow the cheese to melt slightly. Set aside.
  2. Make the Pancake Batter: In a mixing bowl, combine the Hungry Jack Pancake Mix, water, and maple syrup. Stir until just combined, avoiding overmixing to keep the batter light and fluffy.
  3. Combine and Fill Muffin Tins: Preheat a muffin tin by lightly greasing each cup. Pour a spoonful of pancake batter into each muffin cup to cover the bottom, then add a spoonful of the sausage mixture, and top with a few blueberries. Finally, cover with more pancake batter to almost fill each cup.
  4. Bake the Bites: Place the muffin tin in a preheated oven at 350°F (175°C) and bake for approximately 15-20 minutes or until the pancakes are golden, set, and a toothpick inserted into the center of a bite comes out clean.
  5. Cool and Serve: Allow the McGriddle Bites to cool for a few minutes in the tin before carefully removing. Serve warm with extra maple syrup if desired for dipping or drizzling.
