Ingredients

Scale

Tortillas and Oil

  • 8 corn tortillas (6-inch size)
  • 1 tablespoon cooking oil

Chicken and Seasoning

  • 1 1/2 cups cooked chicken, shredded (preferably rotisserie chicken)
  • 2 tablespoons taco seasoning mix

Vegetables and Beans

  • 8.5 ounces canned corn, drained
  • 15 ounces black beans, rinsed and drained
  • 8 ounces salsa (store-bought or homemade)
  • Fresh cilantro leaves, for garnish
  • Tomatoes, diced, for garnish

Cheese

  • 2 cups shredded Colby Jack cheese

Instructions

  1. Prepare the tortillas: Heat the cooking oil in a skillet over medium heat. Fry each corn tortilla for about 1-2 minutes on each side until they are crispy but not burnt. Remove and drain on paper towels.
  2. Season the shredded chicken: In a bowl, combine the shredded cooked chicken with the taco seasoning mix. Mix well to ensure the chicken is evenly coated with seasoning.
  3. Heat the beans and corn: In a saucepan over medium heat, warm the black beans and drained corn together until heated through, about 5 minutes. Stir occasionally.
  4. Assemble the tostadas: Preheat your oven to 375°F (190°C). On each crispy tortilla, spread a layer of the bean and corn mixture. Then add a generous amount of the seasoned shredded chicken on top.
  5. Add salsa and cheese: Spoon salsa over each chicken-topped tortilla, then sprinkle evenly with shredded Colby Jack cheese.
  6. Bake to melt cheese: Place the assembled tostadas on a baking sheet and bake in the preheated oven for 7-10 minutes or until the cheese is fully melted and bubbly.
  7. Garnish and serve: Remove from the oven and garnish each tostada with fresh cilantro leaves and diced tomatoes. Serve immediately for the best texture and flavor.

Notes

  • Using rotisserie chicken saves preparation time and adds great flavor.
  • For extra heat, add sliced jalapeños or a splash of hot sauce.
  • Corn tortillas can be baked instead of fried for a lower-fat option.
  • Customize toppings with avocado slices, sour cream, or chopped onions.
  • Store leftover tostada components separately to maintain crispiness.
