Ingredients

Scale

Main Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 1 packet au jus gravy mix (about 0.87 oz)
  • 1 packet ranch dressing mix (about 1 oz)
  • 810 pepperoncini peppers
  • ¾ cup pepperoncini juice (from the jar of peppers)
  • ½ cup butter (1 stick), sliced

Instructions

  1. Prepare the Chicken: Rinse and pat dry the chicken breasts, then place them in the bottom of a slow cooker in an even layer.
  2. Add the Onion and Seasonings: Scatter the diced onion over the chicken. Sprinkle the au jus gravy mix and ranch dressing mix evenly on top of the chicken and onions to distribute the flavors uniformly.
  3. Top with Peppers and Butter: Place the pepperoncini peppers over the seasoned chicken, then layer the sliced butter evenly over the top to ensure the chicken stays moist and flavorful as it cooks.
  4. Pour Liquid: Pour the ¾ cup of pepperoncini juice over the entire mixture; this will add tang and help create a rich sauce.
  5. Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded with a fork.
  6. Serve: Once cooked, shred the chicken with two forks in the slow cooker and mix it with the juices and peppers. Serve over rice, mashed potatoes, or sandwich buns for a delicious meal.

Notes

  • You can substitute chicken thighs for breasts if preferred; thighs add extra moisture and flavor.
  • Adjust the number of pepperoncini peppers based on your preference for spicy and tangy heat.
  • Leftovers keep well in the refrigerator for up to 3 days and can be frozen for up to 2 months.
  • Serve with sides like roasted vegetables, coleslaw, or simple green salad for a complete meal.
  • If you do not have pepperoncini juice, use a mix of chicken broth and a splash of vinegar plus a pinch of sugar as a substitute.
