Instructions

  1. Prepare the Crust: Crush the chocolate sandwich cookies into fine crumbs using a food processor or by placing the cookies in a sealed bag and crushing with a rolling pin. Mix the crumbs with the melted butter until well combined. Press this mixture evenly into the bottom and up the sides of a 9-inch pie pan to form the crust. Chill in the refrigerator while preparing the next layers.
  2. Make the Fudge Layer: In a saucepan, heat the heavy cream until warm but not boiling. Remove from heat and stir in the semi-sweet chocolate chips until melted and smooth. In a separate bowl, whisk together the eggs, granulated sugar, and vanilla extract until well combined. Slowly pour the chocolate mixture into the egg mixture, whisking constantly to avoid curdling. Pour the fudge filling into the chilled crust and bake at 350°F (175°C) for 20-25 minutes, or until the fudge layer is set but still slightly jiggly in the center. Cool to room temperature.
  3. Prepare the Chocolate Mousse: Melt the semi-sweet chocolate chips in a heatproof bowl set over simmering water or in short intervals in the microwave, stirring until smooth. In a separate bowl, whip 1 cup of the heavy cream with powdered sugar until stiff peaks form. Gently fold the melted chocolate into the whipped cream until fully combined without deflating the mixture. Spread the mousse evenly over the cooled fudge layer.
  4. Make the Whipped Cream Topping: In a chilled bowl, whip the remaining ½ cup heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread or pipe the whipped cream over the mousse layer.
