Ingredients

Scale

Puff Pastry Base

  • 17.3 oz puff pastry (thawed)
  • 2 tbsp olive oil

Filling

  • 16 oz cremini mushrooms, diced
  • 1 medium yellow onion, diced
  • 6 cloves garlic, minced
  • 12 oz sharp white cheddar cheese, grated
  • Coarse kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Thaw Puff Pastry: Leave the puff pastry sheets at room temperature for about 30 minutes until thawed, then lay them on a large cutting board for cutting.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 400℉ (200℃) and grease a standard muffin pan to prevent sticking.
  3. Heat Olive Oil: Place a large pan over medium-high heat and add 2 tablespoons of olive oil, letting it warm for about a minute.
  4. Prep Vegetables and Cheese: Dice the cremini mushrooms and onion, mince the garlic cloves, and grate the sharp white cheddar cheese into a bowl.
  5. Sauté Mushrooms and Garlic: Add the diced mushrooms to the hot pan and cook until golden brown, stirring occasionally. Create a well in the center, add minced garlic, and sauté for about 1 minute until fragrant.
  6. Cook Onion and Season: Mix in the diced onion with the mushrooms and garlic, cooking over medium heat until the mushrooms soften and excess liquid evaporates. Season with kosher salt and black pepper to taste, then remove from heat.
  7. Combine Filling Ingredients: Allow the sautéed mixture to cool slightly, then gently stir in the grated white cheddar cheese until evenly mixed.
  8. Prepare Puff Pastry Squares: Roll out the puff pastry slightly for easier handling, then cut each sheet into 9 equal squares.
  9. Shape Pastry Cups: Press each pastry square gently into the greased muffin pan cups, forming a cup shape.
  10. Fill Pastry Cups: Spoon about 2 to 2½ tablespoons of the mushroom cheese filling into each pastry cup, filling generously.
  11. Bake: Place the muffin pan in the preheated oven and bake for 15-17 minutes or until the puff pastry is golden brown and puffed.
  12. Optional Garnish: Once baked, optionally garnish the puff bites with fresh herbs for a vibrant touch before serving.

Notes

  • Ensure the puff pastry is fully thawed for easy handling and better puffing.
  • Use a well-greased muffin pan to easily remove puff bites after baking.
  • Do not overfill the pastry cups to prevent spills during baking.
  • For extra flavor, try adding fresh thyme or parsley to the filling mixture.
  • Serve warm for the best melty, flaky texture and taste.
