Instructions

  1. Prepare the Potatoes: Preheat your oven to 425°F (220°C). Peel and cut the potatoes into bite-sized cubes. Toss them in a bowl with olive oil, smoked paprika, and salt until evenly coated.
  2. Roast the Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast them in the preheated oven for 30-35 minutes, turning halfway through, until they are golden brown and crispy on the outside and tender on the inside.
  3. Make the Tomato Sauce: While the potatoes are roasting, heat a tablespoon of olive oil in a small saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the tomato sauce and smoked paprika, then season with salt and pepper. Simmer gently for 10 minutes to meld the flavors, then remove from heat.
  4. Prepare the Aioli: In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and a pinch of salt. Stir well until smooth and creamy.
