For the Peaches:
- 8 cups fresh peaches, peeled and sliced (about 6–7 large peaches)
- 1 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch (optional, for thickening)
For the Batter:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup unsalted butter, melted and slightly cooled
- Prepare the Peaches: In a large bowl, combine the peeled and sliced peaches with 1 cup of granulated sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch if using. Stir gently to coat the peaches evenly and set aside to macerate for 10-15 minutes, allowing the flavors to meld and the peaches to release some juices.
- Preheat Oven and Melt Butter: Preheat your oven to 350°F (175°C). While the oven heats, melt 1/2 cup of unsalted butter in a 9×13-inch baking dish placed in the oven to melt and warm the butter evenly.
- Prepare the Batter: In a separate mixing bowl, whisk together the all-purpose flour, 1 cup of granulated sugar, baking powder, and salt. Slowly add the whole milk, stirring until the batter is smooth and free of lumps.
- Assemble the Cobbler: Once the butter in the baking dish is fully melted, carefully remove the dish from the oven. Pour the batter directly over the melted butter in the dish, but do not stir. Spoon the prepared peach mixture evenly over the batter. The batter will rise around the peaches during baking.
- Bake: Place the baking dish back into the oven and bake for 40-45 minutes or until the cobbler topping is golden brown and a toothpick inserted into the batter comes out clean.
- Cool and Serve: Allow the peach cobbler to cool for 10-15 minutes before serving. It pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
- Use ripe, but firm peaches for the best texture and flavor.
- If fresh peaches are not available, frozen peaches can be substituted but may require less sugar due to added sweetness.
- For a thicker filling, increase cornstarch to 1 tablespoon.
- The batter is poured under the peaches, so the topping rises around the fruit as it bakes.
- Store leftovers covered in the refrigerator for up to 3 days.
