Egg Rolls

  • 1012 egg roll wrappers
  • Vegetable oil for frying (about 2 cups)
  • 1 egg, beaten (for sealing wrappers)

Instructions

  1. Cook the Filling: Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the thinly sliced beef and cook until browned, about 3-4 minutes. Add the sliced onions and bell peppers and sauté until they are tender and slightly caramelized, about 5-6 minutes. Remove from heat and stir in the shredded cheese until melted and well combined. Allow the mixture to cool slightly.
  2. Wrap in Egg Rolls: Lay one egg roll wrapper on a clean surface with a corner pointing towards you (diamond shape). Spoon about 2-3 tablespoons of the cooled filling near the corner closest to you. Fold the corner over the filling, then fold in the sides tightly. Roll the wrapper away from you, sealing the top corner with beaten egg to secure it. Repeat with remaining wrappers and filling.
  3. Fry Until Golden: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Carefully place 3-4 egg rolls at a time into the hot oil, frying for 3-4 minutes or until they are golden brown and crispy. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
