Samoa Brownies are a decadent dessert that combines rich, fudgy chocolate brownies topped with a luscious layer of caramel, toasted coconut, and drizzled with chocolate. Inspired by the flavors of the beloved Samoa cookie, these brownies offer a perfect balance of gooey sweetness and crunchy texture ideal for any chocolate lover.

Ingredients

Scale

Brownie Base

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Caramel Topping

  • 1 cup caramel sauce or soft caramel candies, melted

Coconut Topping

  • 1 cup shredded sweetened coconut, toasted

Chocolate Drizzle

  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vegetable oil (optional, for smoother drizzle)

Instructions

  1. Prepare the Brownie Base: Preheat your oven to 350°F (175°C). In a microwave-safe bowl, melt the butter. Stir in sugar, eggs, and vanilla until smooth. Add cocoa powder, flour, salt, and baking powder; mix until just combined. Pour the batter evenly into a greased 8×8-inch baking pan.
  2. Bake the Brownies: Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Remove from oven and allow to cool completely.
  3. Layer the Caramel: Evenly spread the caramel sauce over the cooled brownies, creating a smooth layer. If using caramel candies, melt them gently before spreading.
  4. Add the Toasted Coconut: Toast shredded coconut in a dry skillet over medium heat, stirring frequently until golden brown and fragrant, about 3 to 5 minutes. Sprinkle the toasted coconut evenly over the caramel layer.
  5. Drizzle with Chocolate: Melt the chocolate chips with vegetable oil in a microwave-safe bowl in 20-second increments, stirring between until smooth. Drizzle the melted chocolate over the coconut layer in a decorative pattern.
  6. Chill Before Slicing: Place the layered brownies in the refrigerator and chill for at least 1 hour to set all layers properly. Once chilled, slice into squares and serve.

Notes

  • To toast coconut evenly, keep stirring constantly to prevent burning.
  • For a richer caramel layer, use homemade caramel sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • You can substitute the semi-sweet chocolate with dark or milk chocolate based on preference.
