Ingredients

Scale

Vegetables

  • 1 small head green cabbage (about 22 1/2 pounds)
  • 3 cloves garlic (minced)
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh parsley

Oils and Fats

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter

Seasonings and Flavorings

  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon onion powder
  • 1/2 tablespoon apple cider vinegar
  • 1 lemon wedge

Instructions

  1. Prepare the Cabbage: Cut the cabbage in half through its core. Slice each half as thinly as possible into fine ribbons, slicing around the core, then discard the core.
  2. Heat the Pan and Add Fats: Warm a large saute pan, cast iron skillet, or Dutch oven over medium-high heat. Add the olive oil and unsalted butter, stirring until the butter melts completely.
  3. Add Cabbage and Seasonings: Once the butter is melted, add the sliced cabbage, minced garlic, onion powder, kosher salt, and freshly ground black pepper to the pan.
  4. Saute the Cabbage: Cook the cabbage mixture for 10 to 15 minutes, stirring occasionally until the cabbage becomes tender and starts to brown, developing a nice caramelization.
  5. Finish with Vinegar: Remove the pan from heat and stir in the apple cider vinegar to brighten the flavors. Taste and adjust the salt and pepper if needed.
  6. Add Lemon Juice and Herbs: Squeeze the lemon wedge over the cabbage for fresh acidity. Taste again and add more lemon juice if you prefer a tangier flavor. Finally, sprinkle with chopped fresh oregano and parsley before serving.

Notes

  • Use a sharp knife or mandoline to slice the cabbage thinly for the best texture.
  • Adjust cooking time according to your texture preference; less time for crunchier, more for tender cabbage.
  • Substitute fresh herbs with dried oregano and parsley if fresh is unavailable, but use half the quantity.
  • This dish pairs well with grilled meats or can be served as a light vegetarian side.
