Instructions

  1. Prepare the Shortening: In a large mixing bowl, start by placing the Sweetex High Ratio Shortening. If Sweetex is unavailable, substitute with traditional vegetable shortening. Ensure the shortening is at room temperature for easier mixing.
  2. Add Powdered Sugar: Gradually add the powdered sugar to the shortening. It’s best to sift the powdered sugar beforehand to prevent any lumps and achieve a smoother texture.
  3. Mix Shortening and Sugar: Using a stand mixer fitted with the paddle attachment or a hand mixer, blend the shortening and powdered sugar at low speed to combine, then increase to medium for about 3-5 minutes until the mixture is light and fluffy.
  4. Incorporate Water: Slowly add 9 tablespoons of water to the mixture while continuing to mix. Add additional water, up to 12 tablespoons, if needed to achieve your desired consistency. The frosting should be smooth and spreadable but not runny.
  5. Add Flavor and Salt: Add the clear vanilla extract and salt to the frosting and mix thoroughly to evenly distribute the flavor and balance the sweetness.
  6. Final Mixing: Continue mixing for another 2 minutes to fully aerate the frosting and ensure a creamy, smooth consistency.
  7. Storage: Transfer the frosting to an airtight container. This frosting can be stored at room temperature for up to 2 weeks due to the high ratio shortening used, making it shelf-stable. Stir well before use if it has been sitting.
