Ingredients

Scale

Meat and Vegetables

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 cup shredded carrot

Tomato and Broth

  • 14.5 oz. can diced tomatoes
  • 8 oz. can tomato sauce
  • 4 cups beef broth

Seasonings

  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • 1 tsp. salt, or to taste
  • 1/4 tsp. black pepper

Others

  • ½ cup uncooked Minute brand rice
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Brown the Meat: In a skillet over medium-high heat, cook the ground beef until browned and no longer pink. Add the chopped onion and minced garlic, sautéing until the onion is soft and translucent.
  2. Combine Ingredients in Slow Cooker: Transfer the cooked ground beef, onion, and garlic to the slow cooker. Add diced bell pepper, chopped cabbage, shredded carrots, diced tomatoes, tomato sauce, beef broth, paprika, dried oregano, salt, and pepper. Do not add the rice yet.
  3. Mix Ingredients: Stir all ingredients together well in the slow cooker to combine flavors.
  4. Cook on Low: Cover and cook on low heat for 6 hours to allow vegetables to soften and flavors to meld.
  5. Add Rice and Continue Cooking: Add the uncooked Minute rice to the slow cooker, stir to incorporate, and cook for an additional 45 minutes on low until the rice is tender.
  6. Serve and Garnish: Ladle the soup into bowls, garnish with fresh chopped parsley if desired, and enjoy this warm, comforting meal.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • If you prefer a thicker soup, let it cook uncovered for the last 30 minutes to reduce the broth.
  • Minute rice is recommended for quicker cooking; if using regular rice, soak beforehand and adjust cooking time accordingly.
  • Adjust salt to taste towards the end of cooking.
  • Leftovers keep well in the refrigerator for up to 3 days and freeze beautifully for up to 2 months.
