Instructions

  1. Prepare the filling: In a large bowl, combine the cooked shredded chicken, cooked rice, black beans, corn, 1 cup shredded cheese, sour cream, salsa or enchilada sauce, ground cumin, chili powder, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Assemble the burritos: Lay out the flour tortillas on a clean surface. Divide the filling evenly among the tortillas, placing it in the center of each. Fold in the sides of the tortilla and then roll it up tightly from one end to the other to form burritos.
  3. Arrange burritos in baking dish: Lightly grease a baking dish and place the burritos seam-side down in the dish so they hold their shape during baking.
  4. Prepare the smothering sauce: In a separate bowl, mix the enchilada sauce with salsa to create a flavorful smothering sauce.
