This Snickerdoodle Cobbler is a delightful twist on the classic snickerdoodle cookie, transformed into a warm, gooey cobbler dessert. Combining the comforting flavors of cinnamon and sugar with a soft, cake-like texture, this cobbler is perfect for cozy gatherings or a sweet treat any day. With a luscious brown sugar and cinnamon sauce bubbling beneath a tender cinnamon-spiced topping, it’s an irresistible dessert that’s surprisingly simple to make.

Ingredients

Scale

For the Cobbler Batter

  • 1/3 cup unsalted butter (melted)
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon

For the Sauce

  • 1 1/2 cups brown sugar (packed)
  • 1 1/2 cups hot water
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Add the melted butter, milk, and vanilla extract to the dry ingredients, stirring until the batter is smooth and well combined.
  2. Make the Sauce: In a separate bowl, combine the brown sugar, hot water, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Stir until the sugars dissolve and the mixture is smooth.
  3. Assemble the Cobbler: Pour the batter evenly into a greased baking dish. Slowly pour the brown sugar sauce mixture evenly over the batter, but do not stir. The sauce will settle through the batter during baking.
  4. Bake the Cobbler: Preheat the oven to 350°F (175°C). Place the baking dish in the oven and bake for 45 to 50 minutes, or until the top is golden brown and a toothpick inserted into the cobbler comes out clean except for some moist crumbs. The sauce will be bubbling around the edges.
  5. Cool and Serve: Remove the cobbler from the oven and allow it to cool for at least 10 minutes before serving. This helps the sauce thicken slightly and the flavors to meld.

Notes

  • Use whole milk for the richest flavor; you can substitute with 2% milk if desired.
  • For an extra cinnamon kick, sprinkle a little cinnamon sugar on top before baking.
  • Serve warm with vanilla ice cream or whipped cream for a classic dessert experience.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated gently before serving.
  • Make sure the hot water used in the sauce is just off the boil to help dissolve the sugars effectively.
