Date Centre
- 120g dates
- 60ml water
- Pinch of salt
Oat Crumble
- 55g ground oats
- 45g rolled oats
- 1/2 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 2 tbsp coconut oil, melted
- 2 tbsp almond butter
- Prepare Date Paste: Preheat your oven to 180C (160C fan assisted or 350°F). Add the dates and water to a pan and cook over low to medium heat. Mash the dates with the back of a wooden spoon until you achieve a smooth, thick, and spreadable paste. Remove from heat and allow to cool completely.
- Mix Crumble Ingredients: In a mixing bowl, combine ground oats, rolled oats, baking powder, salt, cinnamon, cardamom, melted coconut oil, and almond butter. Stir well until all ingredients are evenly incorporated.
- Assemble the Cups: Press half of the oat crumble mixture firmly into silicon cupcake or muffin molds—mini molds are recommended for 8 servings. Spread an even layer of the cooled date paste over this base. Crumble the remaining oat mixture on top to create a crumble layer.
- Bake: Place the assembled cups in the preheated oven and bake for 20-25 minutes until the top is golden and the crumble is set.
- Cool and Serve: Remove from oven and allow the oat date cups to cool completely in the molds. They are best served chilled for optimal texture and flavor.
- Storage: Store the cooled oat date cups in an airtight container in the refrigerator for 3-4 days to maintain freshness and taste.
Notes
- Using mini cupcake molds makes 8 perfectly sized servings; using regular molds will yield fewer servings.
- Make sure the date paste is smooth and spreadable for easy layering.
- You can experiment with different nuts or nut butters if almond butter is unavailable.
- These oat date cups are naturally vegan and free from refined sugars.
- Chilling the cups before serving improves their texture and taste.
