Steak Queso Rice is a hearty and flavorful one-pan meal combining tender, seasoned steak with cheesy, creamy rice. Infused with smoky spices and melted cheddar and Monterey Jack cheeses, this dish offers a comforting Tex-Mex twist perfect for a satisfying lunch or dinner.

Steak and Seasoning

  • 450g (1 lb) flank or sirloin steak
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Cheese Sauce and Rice

  • 1½ cups whole milk
  • ½ tsp ground cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped

Instructions

  1. Prepare the steak: Season the flank or sirloin steak with paprika, 2 tsp cumin, garlic powder, salt, and pepper. Rub the seasoning evenly to ensure the flavors penetrate the meat.
  2. Cook the steak: Heat olive oil in a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side or until desired doneness. Remove steak from skillet, let rest for a few minutes, then slice thinly against the grain.
  3. Sauté garlic: In the same skillet, melt butter over medium heat. Add finely chopped garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
  4. Make the cheese sauce: Lower the heat and pour in whole milk. Sprinkle in the remaining ½ tsp cumin, chili powder, and season with salt and pepper. Gradually add shredded cheddar cheese and stir continuously until melted and smooth.
  5. Combine rice and cheese sauce: Stir in cooked rice (about 2 cups cooked rice assumed) into the cheese sauce, mixing well to coat all grains evenly.
  6. Add steak and Monterey Jack cheese: Fold in the sliced steak and shredded Monterey Jack cheese. Allow the Monterey Jack cheese to melt slightly over low heat so everything is hot and cheesy.
  7. Serve: Remove from heat and serve steak queso rice immediately, garnished with additional spices or fresh herbs if desired.
